Pete Alexander
One of three players with three pitching triple crowns. He has four ERA titles, and finished 2nd twice. He led the league in wins six times, WHIP five times, strikeoutssix times (three other top three finishes), and shutouts eight times. His ERA+ topped the league four times.
Craig Biggio
The thing about a double play is that it makes two outs, but it only counts as one for the hitter. Craig Biggio didn't like double plays (he average only 9 a year and hit into zero in 162 games in 1997). While he didn't have a great amount of power, he did average 58 doubles a year. He was a fantastic fielder and had a good batting average and OBP. More than that, he was a fantastic baserunner.
Tim Raines
He only has one batting title and one OBP title, but was consistent for his career, averaging .294 with a .385 OBP. He led the league in stolen bases in four consecutive years and has a fantastic SB %. He hardly strikes out (averaging 63 a year). Just look at the numbers. He was turned down from the Hall, yet he's just as good, if not better, than Lou Brock.

Five save titles don't lie. Neither do four Rolaids Relief Man of the Year awards, and those aren't opinions, that's a statistical award. He had a career 2.76 earned run average.
Lance Berkman
He's my pick for active player. He's batting .299 with a .411 OBP for his career. Last year he stole 18 bases and smacked 29 HR, 46 2B, and drove home 106 runs while scoring 114. In 2006 he belted 45 round-trippers and doesn't strike out a very great amount (averages 113 per 162 games). Is he versatile? Yeah. He can play all three outfield spots and first. Anywhere you put him, he'll field. Of the active players, who has the fourth best OBP? Berkman. He's behind Manny (very popular, steroids), Pujols (who everyone knows is amazing) and Helton (whose stats are helped by Coors).

If you're really interested in environmental science, then you should take AP Environmental Science; colleges like to see students who take hard classes, but they also want students who pursue their interests. Some people take AP ES just as a buffer for their GPA, but if you're taking it because you're interested in the subject matter, then I think that's a good reason.As for the foreign language issue, many colleges require you to take 2-4 years of ONE foreign language (ex. four years of Latin), NOT as many foreign languages as possible (ex. 1 year of Spanish, 2 years of French, 1 year of Latin, etc). It's OK to take multiple languages (I know some people who have because they like learning new languages), but if you're taking languages just to fulfill high school graduation or college entrance requirements, sticking with one language for several years is better than jumping around.
AP Euro was a fun class, but if you can only pick between Latin, AP Euro, and AP ES next year, I would probably not take AP Euro in your situation, since you seem to be doing it just for the GPA (but if you have any interest in history, I do recommend taking it your junior or senior year, as it is a great class).
