I missed your saying what degrees you currently have. You have two main ways to go, either specialize more deeply in what you already have, or broaden so as to not only be flexible in future opportunities but also to be able to cross-pollinate in whatever you do wind up doing. Either approach can give you strong job opportunities, but the former depends on your really loving what you are doing.

Sounds like the 3rd option to get (another?) BS in engineering would be like devoting yourself to a field you really like. I'm not sure you need it, if your aim is to be able to talk to engineers as an analyst, as you perhaps have already picked up the background you need.

If you already have a degree in business/prelaw, then the grad degree in quant methods will give you the broadening I referred to. Likewise, if your degree was on the quant side already, then going with the JD broadens you in the other direction. Either of these could be good.

All in all, either specialize in what you love, or else broaden yourself the most out of your current comfort zone.

If I could buy stock in a person rather than a company, I'd look for shares in you. :)
