I think that volunteering at a hospital in high school certainly could help. :-)
It is always recommended to job shadow if possible so volunteering will help you make 100% sure this is the field you want to go into. Who knows maybe you'll find that you don't like it afterall and you'll have to explore the 0.1% option.
You may also gain an edge over other prospective students who didn't have that volunteer experience and it will show that you are dedicated to the nursing program. Overall, it sounds like you have a great plan and I hope it all works out for the best.

i can't say much about which school to pick, but what i say is double major in graphic design and journalism (with some study in digital broadcasting) because it will look really good. i've worked for newspapers and if you can work the tech side they'll want you!

I was in the 9th grade when I decided I wanted to be a nurse, I started volunteering my senior year (the hospital I went to didn't accept any volunteers younger than 16) and it got my feet wet into the hospital atmosphere, but not really what nursing was about (you really won't find that out until nursing school). What you do in high school doesn't matter so much to nursing school when you apply, though, the experience helps you. When you get into college focus on the pre-reqs that are required to enter nursing school and do well in those classes because that is what many nursing schools are concerned with (the school I got into also had an interview process and some schools require testing to get in-just check with MTSU's nursing program to see what they base thier acceptance on).
