You get different answers because there are so many things you can do with graphic design. You could include: websites, web graphics, animations, logos, product package designs, book/poster/magazine layouts, clothing graphic design, and informational displays.There is still a lot more that could be added to that list. You should decide what your focus (print media, web design, ad design) is going to be and create portfolio pieces to reflect that.

with the job market the way it is now & for the forseeable future, you are best to stay where you are; companies expect employees to follow their rules, regulations, etc whether the employee "wants to" or not - they pay you not the other way 'round. I applaud you not wanting to cop out to the company, but you may have to be a bit of an actor sometimes; just be thankful to be employed and when you leave work, you can rejoice in being "you" again
