I have to really disagree with the other answer you got. Listing only relevant employment on your resume will create huge employment gaps. Employers will either discard you without further thought, or question you in detail about those gaps when they interview you. Moreover, when you fill out an employment application, you have to sign it at the end and attest that the information is complete and accurate -- and this is a legally binding document.

Instead, you need to be able to talk freely about your prior career, and how it prepared you for the new career you wish to pursue.
