As you will have gathered already, with less than 12 months service, you don't have sufficient service for claiming 'unfair dismissal' at an Employment Tribunal. In theory, at any time, an employer can dismiss you for falling below acceptable performance levels. However, whether the scenario you describe would escape censure from the Judge at an ET if you had longer service is conjecture.

However, it appears you were close to your targets and another employer might have been more considerate. Very hard at any time of the year, and the only consolation is that they may have been struggling generally.

There may be a glimmer of hope for the legal route if you are so minded. If you have not had the 28 days leave you are legally entitled to, then depending on the wording in your contract about rights to pay you in lieu of notice, your notice period may trip you over the 12 months qualifying date. But I cannot say for sure without exact details. Ideally get a lawyer's advice, so try the CAB for free.
