Sadly, you haven't got much chance of having your legitimate grievances put right. The law states that an employer does not have to prove theft, only reasonably suspect it. And as you were there 8 months you have no right to an Employment Tribunal. (You need to have been employed for 12 months.)
Furthermore, you haven't got a right to a reference, or a decent reference. This bastard can write what he wants to provided he can show that he has reasonable doubts of your honesty.
You should have been given the chance by Jobcentre Plus to put your side of the story before they suspended your JSA.
So...all in all....the law stinks and you are in a fairly poor position to do much about it. I feel great sympathy for you.
There there any free lawyers in your area? Your only possible option is suing for defamation of character. You can't get Legal Aid for this.

Unless I've misunderstood things, you are the one who cancelled and decided not to take the job - it wasn't their decision. I agree they messed you about a bit, but if you had held on a bit then you would have been given the job.
