An economics major is likely to be an analytical person, so you may consider a range of "analyst" jobs at all sorts of companies. Market research analyst, data analyst, marketing analyst, business analyst, sales analyst, pricing analyst. Those are the sorts of job titles you might look for. What they tend to have in common is using a lot of Microsoft Excel and Access to manage, query, and analyze data. And getting more technical and sophisticated you see jobs calling for expertise with SQL, SAS, SAP, business intelligence clients, etc.There are companies such as market research firms where analysis is the primary role of the company. And many other companies that have a data-intensive business and need a lot of analysts.
And of course there are many jobs in business in which the specific major does not much matter -- these jobs are open to "generalists". For example you could do marketing at any level without ever having taken a marketing class. If you have reasonably good command of the written language you can do PR & Communications. And sales, of course. Those jobs are more about personality than any technical skill.
Coming out of college you may also get a corporate financial analyst job. Often these demand degrees specifically in finance or accounting, but some Econ majors manage to get there.
I'll warn you that you probably won't see any job openings that specifically call for an Economics major. Sad but true. The jobs I mentioned above certainly don't require Econ majors, but they do require analytical people and some business knowledge helps.

I was having the same problem finding a job, but I went online to see if I could find something that would help. I found this site that, when you sign up, they send you new jobs that open up in your area every week. So you are always up to date with new jobs. I highly recommend it and it's free, so you have nothing to lose. Worked great for me and now I have 3 interviews next week. :-D
