Most of the Latin you will need you will accquire in you AP science classes.
After undergrad, med schools are going to look at grades of course. But they also look and see if you can effectively communicate AND they want to know what makes you different from the other 500+ applicants that got 4.0 in biochem. I would take writer's craft since that will help you write all those undergraduate papers. As far as data management - if you are considering that as a course for medical office mangement, when you become a doctor and have your own practice, you hire people to do that.

If nursing is a career that you love, then it would be a good choice to go back. Nurses are in high demand, have opportunity to travel, and have a very rewarding job because they are helping people. You will always have a job due to the demand, and there are a variety of places that you can work; nursing homes, retirement villages, hospitals, doctor's surgeries, cruise ships, boarding schools (legal reasons), and maybe even in a large highschool. Keep in mind that the nursing jobs more luxury - such as working on a cruise ship - would probabely require more experience, as lots of nurses would want to work on a cruise ship.
There isn't as many options in the health field if you are unable or unwilling to attend university, but you could try occupational therapy assisting, physio therapy assisting, dental assisting, pharmacy assisting, medical secretary, or nursing. (The nursing course has various names according to country.)
