I suggest that you attempt to get your foot in the door by enrolling in a work-study program.

Most companies will be less stringent on their formal work requirements and will tend to give you a chance to prove yourself on the job.

My VISTA experience was awesome. I received valuable training and a chance to develop a number of leadership and employment skills. Explain to them you are serving your country as an AmeriCorps*VISTA member still and you hope they will hold the job offer out to you for another year. Tell them what they want to hear, that the valuable skills you are gaining will help you develop service learning as part of the curriculum for your students. If you do not know about service learning, go the Corporation for National Service website and start your research because you want to make it part of your VISTA program if it has ability to do so. That they have held the job for you for one year already tells me that you have little to worry about. They will offer it again next year or someone else will.
