I don't know what the possibility of finding work as a geologist will be if you have no actual experience as one, but once you have your visa, you can work at any job you can find and it doesn't need to be even remotely connected with your nominated occupation. You should certainly try for work in that field as there does seem to be a demand for geologists but as far as DIAC is concerned, it won't affect your visa if you're not successful.

It isn't clear what you mean by the above unless you have been granted a Skilled – Regional Sponsored (Provisional) Visa (Subclass 475). On most visas, there is no requirement to work at all but a 475 is different in that respect.

If it is a 475, you must live for at least two years and work full time for a total period of 12 months in a Specified Regional Area of Australia before you become eligible to apply for a Skilled – Regional (Residence) visa (subclass 887) which is a permanent visa and therefore gives you PR. The job you work in so that you become eligible to apply for an 887can be any job at all. You could work as a geologist or you could work in a shop or in an office or anywhere else - DIAC won't care what you do as long as it is full time work in a regional area.

If you are prepared to travel, there is huge demand for mine geologists at the moment. However, it sounds like you degree is more environmental science than geology, but you could get a job with a mining company monitoring the environment around the mine.

For example, a friend of mine is working at a drilling operation in Papua New Guinea and is earning around 100K, and he left university last year.

Try applying to companies in Alberta, Canada. We've got almost as much oil up here as the Saudis and the companies are starving for workers!

For general career information: http://www.bls.gov/oco and can search 'construction managers', 'geoscientists and hydrologists' (may need master's degree) and there is usually additional info at the end of the entry about related fields and such.
