An increasing number of programs are requiring students to do internships, which are usually not paid but will instead get you college credit and you'll get to make connections in your industry and develop lots of vital professional skills. It's actually getting increasingly difficult to get a job in many fields without doing internships, first. It's estimated that roughly 80% of all college students do at least one internship, so it is highly advisable to do so no matter what field you are in.

Another good way to get professional work experience is to volunteer. Do some research to find companies in your region that are similar to what you want to do after college and ask if they could use a volunteer to do anything like data entry for an hour or two a week or, for people into photojournalism, contributing photographs for the newspaper in exchange for photo credit in the by-line. This can also lead to internships and potentially even future jobs.

Getting paid professional experience as a college student is a bit harder, but it can be done. Basically anybody could do with good computer skills, regardless of major, so working on campus as a receptionist or data-entry assistant or something along those lines would provide several basic skills that would benefit an individual greatly in professional life. People interested in marketing could talk to the marketing department at their school (basically any college or university will have one) and see if they'll be hiring in the near future and what they look for in a student wanting to work there. Starting on campus is the easiest way to go, especially if you have work-study, because schools typically hire mostly students to work part-time in jobs all over campus. There may be opportunities around town, as well, that you could talk to a professor about, but those are likely to be more competitive and more difficult to get.

In my opinion Employers always hype a job position. They ask for a lot more than what is always required. So in your position, I would think in your 6 years in the restaurant business you have trained others (taught people) and managed a variety of customers under stress (like managing a classroom) so I would apply even if I didn't meet the true prerequisites, because in my non-related jobs I have learned skills that will help me in the job I am applying for. So the question is are confident you can do a job just as well as someone with 2 more years experience and are to able to demonstrate to the employer that you are well qualified for the job even though you do not meet the prerequisites on paper.
