Depends on what type of psychology you're going into, but anything like an abuse shelter, elderly home, preschool, etc would be great work experience. If you figure out what type of psych you want to go into you could narrow your focus.

Believe it or not, volunteering and substituting are still considered "REAL JOBS". Having worked for years in Human Resouces, I know that these type of jobs definitely hold their weight during the interview process. As long as you have good personal references, I would make sure to get some referral info from the places you volunteered and substituted. Your integrity and character are very important in this particular field, so just be honest with your interviewer, be yourself, and I don't anticipate any problems. Nowadays, the schooling you've received along with the jobs you mentioned will definitely get you in for an interview. Then "the ball is in your court".

My dad had a psychological practice for 25+ years, and I worked for him off and on in my teenage years, back then I don't believe they had school psychologists per se, so he was "the whole ball of wax" so to speak for all types of psychological issues.

I have seen psychologists who do that , but the patients like you figured don't feel very comfortable to open up in the presence of some young student , you can't spell your guts out infront of someone who hasn't been even certified and has not taken any confidentiality vows (at least that you are aware of) , but anyways , yes it happens ..
