Try asking at the companies that passed on your resume originally - perhaps they will give you more consideration if you are willing to work without pay. And I believe that you can still access the resources of your school's career placement office even if you graduated two years ago - it would be worth a call to them to ask if they can still help you in your job search as well.

As far as Australia/Sydney is concerned, if you're a UK citizen, you will be able to come on a 12 month Working Holiday visa which will be easy and inexpensive to get. That is the only available visa that will allow you to work and the only restriction is that you are not allowed to work for any given employer for longer than 6 months.
