Depending on the position you apply for, listing acting as a nanny and working at a daycare as experience may be seen in the wrong light (they may think you have prejudice against people with disabilities). Anyway though, I'd focus mainly on your eagerness to be involved and your passion to help. Enthusiasm is probably key.

You
Tell them who you are, what you are studying and where and why you are writing to them e.g. for work experience or to apply for a specific vacancy; if so give job title and where you saw it advertised.
Purpose
What made you apply for the position or why you want the experience. Prove to them you've done your research on what the post will involve and sound enthusiastic!
Your unique selling point!
Tell them what is unique about you to convince them to spend time reading your CV. Your USP should be relevant to the post e.g. degree discipline, dissertation title or previous work experience.
Evidence
Include evidence on the range of key skills or experience you can offer them e.g. IT skills, statistical research skills, report writing, voluntary work etc.
Why them?
Make them feel special! This is again your chance to show them you have researched their organisation, you know who their clients are or who their competitors are.
Miscellaneous
An opportunity to tell them something extra eg why your A' level grades/degree result aren't good enough, when you can't come for interview due to exams or when the vacation dates are if requesting work experience.

We Answered:

You need to first of all look into what qualifications you will need to get into university to stand a chance of getting accepted on to the course. This takes 7 years. You will need at least A level passes at a pass of A+ including chemistry and biology. The number of people applying for a place on vets training courses greatly exceeds the number of places available. You may find that it might be worth your while trying to get on to a veterinary nurses course and if you like that and get the grades you need find out if you can change over.
As for your letter I would write it as normal as you know the name of the person then you should finish it with yours sincerely, (if you start a letter dear sir or madam then it should be finished yours faithfully.
You might also think about doing work experience with an animal charity/dog kennels/cattery etc

We Answered:

Your cover letter should contain 3 things:

1) a greeting that contains your "elevator speech". The elevator speech is your quick statement in 1-2 sentences in answer to the "What do you do?" question.

2) A statement that shows you know a bit about the company and your excitement at the prospect of joining their team

and most importantly:

3) A short paragraph shaped from the job description in their ad telling why you are a perfect fit for their position. Something along the lines of:

"In responde to your requirement for X, Y & Z skills I have worked with "X" on two different projects. I have used "Y" for the last six months on a recent work study assignment and I completed 3 semesters of coursework on "Z".

You will have to shape it to fit your life and skill sets but the implied message is "I am PERFECT" for this job! Just meet me and you will believe it's true!
