OK, first things first. You need to open your options up much further. All the places you have mentioned are specialist areas of animal husbandry. Have you tried local rescue centres and more importantly farms, ie, sheep, pig or cattle. Remember there are only so many vets in an a town so if there are 2 schools in your area with 100 students wanting work experience in the same week with animals you are really cutting down your odds of getting in anywhere.Now CV's
You write a CV yourself, about yourself. It cost nothing but time, printer paper and ink and a few kilobytes of storage on the computer.
It usually has on it your name, address, date of birth. school, grades achieved or in your case expected. Whether you can drive or are IT literate. What hobbies you have, do you volunteer time to any place like a charity. Ate you a member of Cubs, Scouts, Guides etc
It is a brief summary of your life to date. And I do mean brief. You could spend days writing the perfect CV for a job and the person who reads it will take about 10 to 15 seconds looking at it. Tough life but there it is.

You first need to mention a few things. Telling them why you want to spend time with them is important (e.g. you hope to be a vet when you're older). You also need to sell yourself a bit, so tell them what skills you have that you think would make you a good vet, or more able to spend time working at a vet's.As well as these you need to mention some important things like your age, school, how long you want to do work experience with them for, the dates of your work experience etc. You might also want to include a list of the subjects you study at school as well as some grades/levels (or predicted grades/levels if you have no grades yet).
If you are enclosing a CV (this isn't a must have for work experience but will make your letter seem really impressive, but only do it if you have the time and don't rush it) you could put most of the information about school/subjects/past or current weekend work in there and put a few of the best details in a letter along with why you are writing, of course!
