I work as a post doc in a US laboratory, so I am not sure about the situation in the UK. 16 is pretty young, and there might be issues with insurance and the minimum work age, that I am not familiar with. But in our lab we do occasionally take high school students for a summer internship. We researchers can always use some extra help, and you do not have to be experienced to learn some techniques.So I would encourage you to try to find a lab that you can work in. Don't look for job postings, just look for a university center in your city of choice, and see what type of research they do.
The Oxford institute website is not working for me right now, but it looks as if they are part of Oxford University. The Imperial website looks good (and in London).

On these sites, go to the "reseach themes" or "research groups" and browse through their research topics to see if there is something you like. Then, look for professor's names and email addresses, and contact them to see if they would take you. Write a short, 1-2 paragraph text in which you state your name, school, what grade you are in, and what your research interests are. Professors usually don't have much time, so you can send a CV as well, but make sure you spark their interest in the text of the email. Also indicate how many weeks/hours you will be available. It is usually a big plus if you don't expect any money for it. After all, you will be learning a lot of new techniques, and building your CV, and building your network of people. An intern, especially a high school student, will take a lot of "investment" from a mentor (usually a graduate student or a postdoc in the professor's lab), so most labs won't take students for just a week. They love to see students who will work for several weeks in a row, because that is when a student will start to work independently.
Make sure to contact several research groups, at several institutes, to increase your chances of success.
