I have managed a pet store, and we hired just about anyone we weren't really picky about if you had animal handling experience or not. I know the Humane society prefers people with experience (Im a supervisor at one) they would accept you as a volunteer, but not paid..

get out the yellow pages for your area and look up pet shops,vets animal rescue centres and farms.this time of the year rescue centres seem to get a lot of animals in and are always looking for people to help out.
when i was younger work experience was for people at school,if your at school,get the school to get involved as well and see if they can come up with any ideas.

When I did my animal care course, I had to find 10 weeks of work experience which wasn't easy but I did...
4 weeks lambing at my local farm
2 weeks working with a self employed herpetologist
1 week working at my local RSPCA shelter
1 week at a veterinary clinic (I had to travel up country to find that!)
2 weeks at a kennels and cattery

If it is veterinary work your interested in then its best to keep it to vets. Don't just look for local verts but look further afield, maybe if you have friend or family which live further away ask if they wouldn't mind you staying with them during your work experience and see if there are any vet clinics around there.

Other goof places to try are animal rescue shelters, or even some small zoos may take you on.

Do you have a problem committing to some actual labor or are you looking for AT LEAST a week worth of experience?

Immediately I will say the best way to get experience is to offer your services as a volunteer at a vet office/wildlife rehab/zoo/petting zoo/local animal park. This way you don't have to go through the same competitive interviewing process and can choose when you work and when you intend to finish more easily.

As for actual employment, most people break in to the field working kennels at a vet office, zookeeping, or doing temp work at a research station somewhere.

Most places however will not accept even a volunteer for just one single week, taking in a volunteer requires too paperwork on your contractors end and within the animal fields commitment and dedication are key factors. Commitment because it takes a lot of work to train someone to get to the point they can work on their own (since each animal has so many specific needs, and active observation/reporting must also be taught, as well as general maintenance procedure). Dedication because you only want those willing to do some get dirty and work hard, because a lack of work ethic can mean slopiness, can mean maltreatment or neglect of the animals, and does mean you won't be trusted to actually work with them.

For your employer to get reasonable return out of you, you are going to need to stick around for awhile. If you are coming every day for several hours, a single week can mean you'll be ready to be doing stuff on your own by the next week, but your being able to do that depends on the availability of the person who trains new volunteers/employees.

So make a predictable schedule, stress that you have no problem doing what needs to be done as well as working with the animals, and that you come in with an understanding that it's a dirty job, that'll earn you some points.
